Ingredients
  

  • 6 Large peaches
  • 2 Cups of water
  • 1 Cup of granulated sugar
  • 1 Tablespoon of freshly grated Turmeric
  • Juice of half a lemon
  • 1 Teaspoon of vanilla extract

Instructions
 

  • Start off by skinning the peaches. You can do this by creating a small ‘X’ at the bottom of each peach, then immersing them in boiling water for about a minute. The skin should easily peel off.
  • Pit your peaches and chop them into small pieces.
  • Next, into a pot add water, sugar, Turmeric, and lemon juice. Bring this mixture to a slow simmer over medium heat.
  • Once the sugars have dissolved, add the chopped peaches and vanilla extract. Allow this to simmer for around 20 minutes, stirring occasionally, until the peaches soften and the compote has thickened.

This recipe is as versatile as it is delicious. For those who prefer a less sweet variant, you can use honey instead of sugar, or even omit sweeteners altogether letting the natural sweetness of the peaches shine through. You can also add a pinch of cinnamon for a touch of warm spiciness. For vegans, opt for agave syrup instead of honey, ensuring the dish aligns with your dietary needs.
