Ingredients
  

  • 2 large organic oranges
  • 250 grams of fine caster sugar
  • 1 tablespoon of ground turmeric
  • 300 grams of self-raising flour
  • A pinch of salt
  • 4 free-range eggs
  • 200 grams of soft unsalted butter
  • 100 grams of Greek yogurt
  • 1 teaspoon of pure vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grate the zest from the oranges and squeeze out the juice.
  • In a mixing bowl, cream together the butter and sugar until smooth. Add the eggs, one at a time, mixing thoroughly after each addition.
  • Stir in the flour, salt, turmeric, and orange zest. Add the yogurt and orange juice and combine all ingredients until a uniform, smooth batter is achieved.
  • Pour the batter into a greased and lined 20 cm cake tin and bake for approximately 50-60 minutes or until a skewer inserted into the middle comes out clean.
  • Allow the cake to cool in a tin for 10 minutes, remove and let it cool completely on a wire rack.

Notes

Feel free to add another layer of flavor complexity by studding your cake with candied ginger pieces or a sprinkle of cinnamon. For vegan lovers, substitute the eggs with a flaxseed or chia seed equivalent, and swap the Greek yogurt with a dairy-free alternative. Make it gluten-free by using gluten-free self-raising flour.
